Las Palmas Chicken Enchilada Recipe

  • 2 cups cooked chicken, shredded
  • 1 can Las Palmas Enchilada Sauce
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced onion
  • 1/2 cup diced bell pepper
  • 1/4 cup chopped fresh cilantro
  • 8 flour tortillas
  • 1 tablespoon vegetable oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste


  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat the vegetable oil over medium heat. Add the diced onion and bell pepper, and cook until they are softened, about 5 minutes.
  3. Add the shredded chicken, chili powder, cumin, garlic powder, salt, and pepper to the skillet. Stir well to combine and cook for an additional 2 minutes.
  4. Pour half of the Las Palmas Enchilada Sauce into a shallow dish. Dip each flour tortilla into the sauce, coating both sides.
  5. Place a spoonful of the chicken mixture onto each tortilla and roll it up tightly. Place the rolled enchiladas seam-side down in a greased baking dish.
  6. Pour the remaining Las Palmas Enchilada Sauce over the enchiladas, making sure they are fully covered.
  7. Sprinkle the shredded cheddar cheese over the top of the enchiladas.
