Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1 cup kumquats, sliced

  • 3 cloves garlic, minced

  • 1 tablespoon soy sauce
  • 1 teaspoon cornstarch
  • 1/2 cup chicken broth
  • Salt and pepper to taste

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat the olive oil over medium-high heat.
  3. Season the chicken breasts with salt and pepper, then add them to the skillet. Cook for about 4-5 minutes on each side, or until golden brown.
  4. Remove the chicken from the skillet and set aside.
  5. In the same skillet, add the minced garlic and sliced kumquats. Sauté for 2-3 minutes, until the kumquats start to soften.
