Prep Time: 15 minutes Cook Time: 30 minutes

  • 4 boneless, skinless chicken breasts
  • 1/2 cup all-purpose flour
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1/2 cup Marsala wine
  • 1 cup chicken broth
  • 8 ounces mushrooms, sliced
  • 2 cloves garlic, minced
  • 1 tablespoon fresh thyme leaves
  • 2 tablespoons unsalted margarine
  • Chopped fresh parsley, for garnish

  1. In a shallow dish, combine the flour, kosher salt, and black pepper. Dredge the chicken breasts in the flour mixture, shaking off any excess.
  2. In a large skillet, heat the olive oil over medium-high heat. Add the chicken breasts and cook until golden brown on both sides, about 4-5 minutes per side. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add the Marsala wine and bring to a boil. Cook for 1 minute, scraping the bottom of the skillet to release any browned bits.
  4. Add the chicken broth, mushrooms, garlic, and thyme to the skillet. Stir to combine and bring to a simmer.
  5. Return the chicken breasts to the skillet and simmer for 10-15 minutes, or until the chicken is cooked through and the sauce has thickened slightly.
  6. Stir in the margarine until melted and well combined.
