Kolkata Chicken Biryani is a flavorful and aromatic dish that originates from the city of Kolkata in India. This biryani is known for its unique blend of spices and tender chicken pieces cooked with fragrant basmati rice. It's a perfect dish to impress your guests or enjoy with your family.

Ingredients:

  • 2 cups basmati rice, soaked for 30 minutes
  • 500g chicken, cut into pieces
  • 1 cup yogurt
  • 2 onions, thinly sliced
  • 2 tomatoes, chopped
  • 1/4 cup ghee
  • 1/4 cup vegetable oil
  • 1/2 cup fresh coriander leaves, chopped
  • 1/2 cup fresh mint leaves, chopped
  • 2 tablespoons ginger-garlic paste
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon garam masala
  • 1 teaspoon cumin seeds
  • 4-5 green cardamom pods
  • 4-5 cloves
  • 2-inch cinnamon stick
  • Salt to taste

Instructions: How to Cook Kolkata Chicken Biryani

  1. Heat ghee and oil in a large pot over medium heat. Add cumin seeds, cardamom pods, cloves, and cinnamon stick. Sauté for a minute until fragrant.
  2. Add sliced onions and cook until golden brown.
  3. Add ginger-garlic paste and sauté for 2 minutes.
  4. Add chicken pieces and cook until they are browned on all sides.
  5. Stir in turmeric powder, red chili powder, and salt. Cook for another 5 minutes.
  6. Layer the soaked rice over the chicken mixture. Add chopped tomatoes, yogurt, half of the coriander leaves, and half of the mint leaves.
  7. Sprinkle garam masala on top. Pour 3 cups of water over the rice.
  8. Cover the pot with a tight-fitting lid and cook on low heat for 30-35 minutes or until the rice is cooked and the chicken is tender.
  9. Garnish with the remaining coriander and mint leaves. Serve hot with raita or salad.
