Ingredients:

  • 2 cups basmati rice
  • 500 grams chicken, cut into pieces
  • 2 onions, thinly sliced
  • 4 cloves garlic, minced
  • 1-inch ginger, grated
  • 2 green chilies, slit
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon garam masala
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1 cup plain yogurt
  • 1/2 cup milk
  • 1/4 cup ghee or clarified butter
  • A handful of fresh mint leaves
  • A handful of fresh coriander leaves
  • Salt to taste

Instructions:

  1. Wash the basmati rice under cold water until the water runs clear. Soak the rice in water for 30 minutes, then drain and set aside.
  2. In a large pan, heat the ghee over medium heat. Add the sliced onions and cook until golden brown.
  3. Add the minced garlic, grated ginger, and slit green chilies to the pan. Sauté for a minute until fragrant.
  4. Add the chicken pieces to the pan and cook until they are browned on all sides.
