  • 1 pound boneless, skinless chicken breasts
  • 8 cups low sodium chicken broth
  • 2 carrots, peeled and sliced
  • 2 celery stalks, sliced
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • 2 cups egg noodles
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)


  1. In a large pot, heat some olive oil over medium heat. Add the diced onion, minced garlic, sliced carrots, and sliced celery. Cook until the vegetables are tender, about 5 minutes.
  2. Add the chicken breasts to the pot and pour in the low sodium chicken broth. Add the dried thyme and bay leaf. Bring the mixture to a boil, then reduce the heat and let it simmer for 20 minutes, or until the chicken is cooked through.
  3. Remove the chicken breasts from the pot and shred them using two forks. Return the shredded chicken to the pot.
  4. Add the egg noodles to the pot and cook according to package instructions, usually about 8-10 minutes.
  5. Season the soup with salt and pepper to taste. Remove the bay leaf.
  6. Serve the soup hot, garnished with fresh parsley if desired.
