  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 cups broccoli florets

  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup grated Parmesan cheese


  1. In a medium saucepan, bring the chicken broth to a boil. Add the rice, reduce the heat to low, cover, and simmer for 15 minutes or until the rice is cooked and the liquid is absorbed.
  2. In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic, and sauté until the onion is translucent and fragrant.
  3. Add the chicken pieces to the skillet and cook until they are browned and cooked through, about 5-7 minutes.
  4. Add the broccoli florets to the skillet and cook for an additional 3-4 minutes, until they are tender-crisp.
  5. Sprinkle the dried thyme, salt, and black pepper over the chicken and broccoli mixture, and stir to combine.
  6. Add the cooked rice to the skillet and stir well to combine all the ingredients.
  7. Remove the skillet from the heat and sprinkle the grated Parmesan cheese over the top of the dish.
  8. Cover the skillet with a lid and let it sit for a few minutes to allow the cheese to melt.
