- 2 boneless, skinless chicken breasts
- 1/2 pound of shrimp, peeled and deveined
- 1 cup of shredded cheddar cheese
- 1/4 cup of diced red bell pepper
- 1/4 cup of diced green bell pepper
- 1/4 cup of diced red onion
- 2 cloves of garlic, minced
- 2 tablespoons of olive oil
- 1 tablespoon of lime juice
- 1 teaspoon of paprika
- 1/2 teaspoon of cumin
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
- 1/4 teaspoon of cayenne pepper (optional, for extra heat)
- Fresh cilantro, for garnish
Instructions:
- Preheat your oven to 375°F (190°C).
- In a small bowl, combine the paprika, cumin, salt, black pepper, and cayenne pepper (if using). Set aside.
- Season the chicken breasts and shrimp with half of the spice mixture.
- In a large skillet, heat the olive oil over medium-high heat. Add the chicken breasts and cook for 4-5 minutes per side, or until browned. Remove the chicken from the skillet and set aside.
- In the same skillet, add the diced bell peppers, red onion, and minced garlic. Cook for 2-3 minutes, or until the vegetables are slightly softened.
