Kerala Chicken Biryani is a flavorful and aromatic dish that originates from the southern state of Kerala in India. Ingredients:

  • 2 cups basmati rice
  • 500 grams chicken, cut into pieces
  • 2 onions, thinly sliced
  • 2 tomatoes, chopped
  • 4 green chilies, slit
  • 1 tablespoon ginger-garlic paste
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon garam masala
  • 1 teaspoon biryani masala
  • 1/2 cup plain yogurt
  • 1/4 cup chopped mint leaves
  • 1/4 cup chopped coriander leaves
  • 4 cups water
  • 4 tablespoons ghee
  • 2 tablespoons vegetable oil
  • Salt to taste

Instructions:

  1. Wash the basmati rice thoroughly and soak it in water for 30 minutes. Drain the water and set aside.
  2. In a large pan, heat 2 tablespoons of ghee and 1 tablespoon of vegetable oil. Add the sliced onions and sauté until golden brown.
  3. Add the ginger-garlic paste and green chilies to the pan. Sauté for a minute until the raw smell disappears.
  4. Add the chopped tomatoes and cook until they turn soft and mushy.
  5. Now, add the chicken pieces to the pan and cook until they are no longer pink. Stir in the turmeric powder, red chili powder, garam masala, biryani
