  • 4 jidori chicken breasts
  • 1 cup buttermilk
  • 1 tablespoon Dijon mustard
  • 2 cloves garlic, minced

  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup all-purpose flour
  • 1/2 cup cornmeal
  • 1/2 teaspoon cayenne pepper (optional)
  • Vegetable oil, for frying


  1. In a large bowl, whisk together the buttermilk, Dijon mustard, minced garlic, paprika, dried thyme, salt, and black pepper.
  2. Add the jidori chicken breasts to the marinade, making sure they are fully coated. Cover the bowl with plastic wrap and refrigerate for at least 1 hour, or overnight for best results.
  3. In a separate bowl, combine the all-purpose flour, cornmeal, and cayenne pepper (if using).
  4. Remove the chicken breasts from the marinade, allowing any excess marinade to drip off.
