Ingredients:

  • 4 jidori chicken breasts
  • 1 cup buttermilk
  • 1 tablespoon Dijon mustard
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 1 teaspoon salt

Instructions:

  1. In a large bowl, whisk together the buttermilk, Dijon mustard, minced garlic, paprika, dried thyme, salt, and black pepper.

  3. In a separate bowl, combine the all-purpose flour, cornmeal, and cayenne pepper (if using).
  4. Remove the chicken breasts from the marinade, allowing any excess marinade to drip off.
  5. Dredge the chicken breasts in the flour mixture, pressing gently to adhere the coating to the chicken.
  6. In a large skillet, heat vegetable oil over medium-high heat. Add the chicken breasts and cook for about 5-6 minutes per side, or until golden brown and cooked through.
  7. Transfer the cooked chicken to a paper towel-lined plate to drain any excess oil.
  8. Serve the jidori chicken hot with your favorite side
