Jerk Chicken Soup Recipe

- 1 pound boneless, skinless chicken breasts, cut into small pieces
- 2 tablespoons jerk seasoning
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 4 cups chicken broth
- 1 can diced tomatoes
- 1 cup coconut milk
- 1 tablespoon fresh thyme leaves
- 1 tablespoon fresh chopped parsley
- Salt and pepper to taste
Instructions:
- In a bowl, toss the chicken pieces with the jerk seasoning until well coated.
- In a large pot, heat the olive oil over medium heat. Add the chicken and cook until browned, about 5 minutes. Remove the chicken from the pot and set aside.
- In the same pot, add the onion, garlic, bell pepper, carrots, and celery. Cook until the vegetables are softened, about 5 minutes.
- Add the chicken broth, diced tomatoes, coconut milk, thyme, and parsley to the pot. Stir well to combine.
- Bring the soup to a boil, then reduce the heat to low and simmer for 30 minutes.
- Return the chicken to the pot and simmer for an additional 10 minutes, or until the chicken is cooked through and tender.
- Season the soup with salt and pepper to taste.
