Jerk Chicken Soup Recipe

  • 1 pound boneless, skinless chicken breasts, cut into small pieces
  • 2 tablespoons jerk seasoning
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cups chicken broth
  • 1 can diced tomatoes
  • 1 cup coconut milk
  • 1 tablespoon fresh thyme leaves
  • 1 tablespoon fresh chopped parsley
  • Salt and pepper to taste


  1. In a bowl, toss the chicken pieces with the jerk seasoning until well coated.
  2. In a large pot, heat the olive oil over medium heat. Add the chicken and cook until browned, about 5 minutes. Remove the chicken from the pot and set aside.
  3. In the same pot, add the onion, garlic, bell pepper, carrots, and celery. Cook until the vegetables are softened, about 5 minutes.
  4. Add the chicken broth, diced tomatoes, coconut milk, thyme, and parsley to the pot. Stir well to combine.
  5. Bring the soup to a boil, then reduce the heat to low and simmer for 30 minutes.
  6. Return the chicken to the pot and simmer for an additional 10 minutes, or until the chicken is cooked through and tender.
  7. Season the soup with salt and pepper to taste.
  8. Serve
