- 1 lb boneless, skinless chicken breasts
- 1 onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) diced tomatoes
- 1 cup chicken broth
- 2 tbsp chili powder
- 1 tsp cumin
- 1/2 tsp paprika
- Salt and pepper to taste
- Optional toppings: shredded cheese, sour cream, chopped cilantro
Instructions: How to Cook Jason'S Deli Chicken Chili
- Heat a large pot or Dutch oven over medium heat. Add a drizzle of oil and cook the chicken breasts until browned on both sides, about 5 minutes per side. Remove the chicken from the pot and set aside.
- In the same pot, add the diced onion, garlic, and bell pepper. Cook until softened, about 5 minutes.
- Add the black beans, kidney beans, diced tomatoes, chicken broth, chili powder, cumin, paprika, salt, and pepper to the pot. Stir to combine.
- Return the chicken to the pot and bring the chili to a simmer. Cover and cook for 45 minutes to 1 hour, until the chicken is cooked through and the flavors have melded together.
- Remove the chicken from the pot and shred it using two forks. Return the shredded chicken to the pot and stir to combine.
