Ingredients:

  • 1 lb boneless, skinless chicken breasts
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) diced tomatoes
  • 1 cup chicken broth
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • Optional toppings: shredded cheese, sour cream, chopped cilantro

Instructions: How to Cook Jason'S Deli Chicken Chili

  1. Heat a large pot or Dutch oven over medium heat. Add a drizzle of oil and cook the chicken breasts until browned on both sides, about 5 minutes per side. Remove the chicken from the pot and set aside.
  2. In the same pot, add the diced onion, garlic, and bell pepper. Cook until softened, about 5 minutes.
  3. Add the black beans, kidney beans, diced tomatoes, chicken broth, chili powder, cumin, paprika, salt, and pepper to the pot. Stir to combine.
  4. Return the chicken to the pot and bring the chili to a simmer. Cover and cook for 45 minutes to 1 hour, until the chicken is cooked through and the flavors have melded together.
  5. Remove the chicken from the pot and shred it using two forks. Return the shredded chicken to the pot and stir to combine.
