Japanese Chicken Liver Recipe

  • 500g chicken liver
  • 2 tablespoons soy sauce
  • 1 tablespoon mirin
  • 1 tablespoon sake
  • 1 tablespoon sugar
  • 1 tablespoon vegetable oil
  • 1 clove garlic, minced
  • 1 teaspoon grated ginger
  • 1 green onion, chopped


  1. Start by cleaning the chicken livers. Remove any connective tissues or membranes and rinse them under cold water. Pat them dry with a paper towel.
  2. In a small bowl, mix together the soy sauce, mirin, sake, and sugar until the sugar is dissolved. Set aside.
  3. Heat the vegetable oil in a large skillet over medium heat. Add the minced garlic and grated ginger, and sauté for about 1 minute until fragrant.
  4. Add the chicken livers to the skillet and cook for about 2-3 minutes on each side until they are browned and cooked through.
  5. Pour the sauce mixture over the chicken livers and stir well to coat them evenly. Cook for an additional 2 minutes until the sauce thickens slightly.
