Ingredients:

  • 1 whole chicken, cut into pieces
  • 2 tablespoons vegetable oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 bell pepper, chopped
  • 2 tomatoes, chopped
  • 2 tablespoons Jamaican curry powder
  • 1 teaspoon thyme
  • 1 teaspoon paprika
  • 1 teaspoon allspice
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup chicken broth
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons soy sauce
  • 2 tablespoons vinegar
  • 2 tablespoons brown sugar
  • 2 scallions, chopped
  • 1 scotch bonnet pepper, seeded and chopped (optional for extra heat)

Instructions:

  1. In a large bowl, combine the chicken pieces with the Jamaican curry powder, thyme, paprika, allspice, salt, and black pepper. Mix well to coat the chicken evenly. Let it marinate for at least 30 minutes.
  2. In a large skillet or Dutch oven, heat the vegetable oil over medium heat. Add the marinated chicken pieces and cook until browned on all sides, about 5 minutes per side. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add the chopped onion, garlic, bell pepper, and tomatoes. Cook until the vegetables are softened, about 5 minutes.
