Ingredients:

  • 1 whole chicken, cut into pieces
  • 2 tablespoons vegetable oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 carrots, peeled and sliced
  • 2 potatoes, peeled and diced
  • 1 cup pumpkin, peeled and diced
  • 1 cup cabbage, shredded
  • 2 sprigs thyme
  • 2 bay leaves
  • 1 scotch bonnet pepper, whole
  • 6 cups chicken broth
  • Salt and pepper to taste

Instructions:

  1. In a large pot, heat the vegetable oil over medium heat.
  2. Add the chicken pieces to the pot and cook until browned on all sides.
  3. Remove the chicken from the pot and set aside.
  4. In the same pot, add the diced onion and minced garlic. Cook until the onion is translucent.
  5. Add the carrots, potatoes, pumpkin, cabbage, thyme, bay leaves, and scotch bonnet pepper to the pot.
  6. Return the chicken to the pot and pour in the chicken broth.
  7. Bring the soup to a boil, then reduce the heat to low and simmer for 45 minutes to 1 hour, or until the chicken is cooked through and the vegetables are tender.
  8. Remove the scotch bonnet pepper, thyme sprigs, and bay leaves from the pot.
