Ingredients:

  • 4 chicken thighs, bone-in and skin-on
  • 2 tablespoons Jamaican jerk seasoning
  • 1 tablespoon olive oil
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 1 bell pepper, sliced
  • 1 can diced tomatoes
  • 1/2 cup chicken broth
  • Salt and pepper to taste

Instructions: How to Cook Jamaican Baked Chicken

  1. Preheat the oven to 375°F (190°C).
  2. Season the chicken thighs with Jamaican jerk seasoning, salt, and pepper.
  3. In a large oven-safe skillet, heat olive oil over medium-high heat.
  4. Add the chicken thighs skin side down and sear for 3-4 minutes until golden brown.
  5. Remove the chicken from the skillet and set aside.
  6. In the same skillet, add the onion, garlic, and bell pepper. Sauté until softened, about 5 minutes.
  7. Add the diced tomatoes and chicken broth to the skillet. Bring to a simmer.
  8. Return the chicken thighs to the skillet, skin side up.
  9. Cover the skillet with foil and bake in the preheated oven for 30-35 minutes, or until the chicken is cooked through.
  10. Remove the foil and broil for an additional 5 minutes to crisp up the chicken skin.
