- 2 tablespoons Jamaican jerk seasoning
- 1 tablespoon olive oil
- 1 onion, sliced
- 2 cloves garlic, minced
- 1 bell pepper, sliced
- 1 can diced tomatoes
- 1/2 cup chicken broth
- Salt and pepper to taste
Instructions: How to Cook Jamaican Baked Chicken
- Preheat the oven to 375°F (190°C).
- Season the chicken thighs with Jamaican jerk seasoning, salt, and pepper.
- In a large oven-safe skillet, heat olive oil over medium-high heat.
- Add the chicken thighs skin side down and sear for 3-4 minutes until golden brown.
- Remove the chicken from the skillet and set aside.
- In the same skillet, add the onion, garlic, and bell pepper. Sauté until softened, about 5 minutes.
- Add the diced tomatoes and chicken broth to the skillet. Bring to a simmer.
- Return the chicken thighs to the skillet, skin side up.
- Cover the skillet with foil and bake in the preheated oven for 30-35 minutes, or until the chicken is cooked through.
