  • 6 cups chicken broth
  • 1 can diced tomatoes
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup small pasta (such as shells or elbows)

  1. Heat olive oil in a large pot over medium heat. Add the diced onion, carrots, celery, and minced garlic. Cook until the vegetables are tender, about 5 minutes.

  4. Add the diced tomatoes, dried thyme, dried oregano, salt, and black pepper to the pot. Stir well to combine.
  5. Bring the soup back to a boil, then add the pasta. Cook according to the package instructions until the pasta is al dente.
  6. Once the pasta is cooked, remove the pot from heat. Serve the soup hot, garnished with fresh parsley.
