Holden's Chicken Stew is a hearty and comforting dish that is perfect for chilly evenings. This stew is packed with tender chicken, vegetables, and flavorful broth. It is a one-pot meal that is easy to make and will leave you feeling satisfied. The prep time for this recipe is 15 minutes and the cook time is 1 hour and 30 minutes.

Ingredients:

  • 2 pounds boneless, skinless chicken thighs, cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 carrots, peeled and sliced
  • 2 celery stalks, sliced
  • 1 cup frozen peas
  • 4 cups chicken broth
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper to taste

Instructions:

  1. In a large pot, heat the olive oil over medium heat. Add the chicken pieces and cook until browned on all sides. Remove the chicken from the pot and set aside.
  2. In the same pot, add the diced onion and minced garlic. Sauté until the onion becomes translucent and the garlic is fragrant.
  3. Add the sliced carrots and celery to the pot. Cook for a few minutes until they start to soften.
  4. Return the chicken to the pot and pour in the chicken broth. Add the dried thyme, bay leaf, salt, and pepper. Stir well to combine.
  5. Bring the stew to a boil, then reduce the heat to low. Cover the pot and let it simmer for 1 hour, stirring occasionally.
  6. After 1 hour, add the frozen peas to the pot. Stir and continue to simmer for an additional 30 minutes.
  7. Remove the bay leaf from the stew before serving.
