Holdens Chicken Stew Recipe
Holden's Chicken Stew is a hearty and comforting dish that is perfect for chilly evenings. This stew is packed with tender chicken, vegetables, and flavorful broth. Ingredients:
- 2 pounds boneless, skinless chicken thighs, cut into bite-sized pieces
- 1 tablespoon olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 2 carrots, peeled and sliced
- 2 celery stalks, sliced
- 1 cup frozen peas
- 4 cups chicken broth
- 1 teaspoon dried thyme
- 1 bay leaf
- Salt and pepper to taste
Instructions:
- In a large pot, heat the olive oil over medium heat. Add the chicken pieces and cook until browned on all sides. Remove the chicken from the pot and set aside.
- In the same pot, add the diced onion and minced garlic. Sauté until the onion becomes translucent and the garlic is fragrant.
- Add the sliced carrots and celery to the pot. Cook for a few minutes until they start to soften.
- Return the chicken to the pot and pour in the chicken broth. Add the dried thyme, bay leaf, salt, and pepper. Stir well to combine.
