  • 1 1/2 lbs boneless, skinless chicken thighs, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 carrots, peeled and sliced
  • 2 celery stalks, sliced
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary

  • 4 cups chicken broth
  • 1 cup frozen peas

Instructions: How to Cook Holdens Chicken Stew

  1. Season the chicken pieces with salt and pepper.
  2. In a large pot or Dutch oven, heat the olive oil over medium heat.
  3. Add the chicken pieces and cook until browned on all sides, about 5 minutes. Remove the chicken from the pot and set aside.
  4. Add the onion, carrots, and celery to the pot. Cook until the vegetables are softened, about 5 minutes.
  5. Add the garlic, thyme, and rosemary. Cook for another minute until fragrant.
  6. Sprinkle the flour over the vegetables and stir to coat.
  7. Slowly pour in the chicken broth, stirring constantly to prevent lumps from forming.
  8. Return the chicken to the pot and bring the stew to a simmer. Cover and cook for 30 minutes, stirring occasionally.
  9. Add the frozen peas and cook for an additional 10 minutes, or until the chicken is cooked through and the vegetables are tender.
