Heritage Chicken Recipe

  • 1 whole heritage chicken
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 4 cloves garlic, minced
  • 1 lemon, sliced
  • 1 onion, sliced


  1. Preheat the oven to 375°F (190°C).
  2. Rinse the heritage chicken under cold water and pat it dry with paper towels.
  3. In a small bowl, mix together the olive oil, salt, black pepper, paprika, dried thyme, dried rosemary, and minced garlic.
  4. Place the chicken in a roasting pan and rub the olive oil mixture all over the chicken, making sure to coat it evenly.
  5. Stuff the cavity of the chicken with the sliced lemon and onion.
  6. Cover the roasting pan with aluminum foil and roast the chicken in the preheated oven for 30 minutes.
  7. Remove the foil and continue roasting for another 30 minutes, or until the chicken is golden brown and cooked through.
  8. Remove the chicken from the oven and let it rest for 10 minutes before carving.
  9. Serve the heritage chicken with your favorite side dishes and enjoy!
