Heritage Chicken Recipe

- 1 whole heritage chicken
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon paprika
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 4 cloves garlic, minced
- 1 lemon, sliced
- 1 onion, sliced
Instructions:
- Preheat the oven to 375°F (190°C).
- Rinse the heritage chicken under cold water and pat it dry with paper towels.
- In a small bowl, mix together the olive oil, salt, black pepper, paprika, dried thyme, dried rosemary, and minced garlic.
- Place the chicken in a roasting pan and rub the olive oil mixture all over the chicken, making sure to coat it evenly.
- Stuff the cavity of the chicken with the sliced lemon and onion.
- Cover the roasting pan with aluminum foil and roast the chicken in the preheated oven for 30 minutes.
- Remove the foil and continue roasting for another 30 minutes, or until the chicken is golden brown and cooked through.
- Remove the chicken from the oven and let it rest for 10 minutes before carving.
- Serve the heritage chicken with your favorite side dishes and enjoy!
