- 1 whole heritage chicken
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 lemon, sliced
- 1 teaspoon dried thyme
- Salt and pepper to taste
Instructions: How to Cook Heritage Chicken
- Preheat the oven to 375°F (190°C).
- Pat the heritage chicken dry with paper towels and season generously with salt and pepper, both inside and out.
- In a small bowl, mix together the olive oil, minced garlic, and dried thyme.
- Rub the olive oil mixture all over the chicken, making sure to coat it evenly.
- Place the lemon slices inside the cavity of the chicken.
- Place the chicken in a roasting pan and roast in the preheated oven for about 1 hour, or until the internal temperature reaches 165°F (74°C).
- Remove the chicken from the oven and let it rest for 10 minutes before carving.
- Serve the heritage chicken with your favorite side dishes and enjoy!
