Heritage Chicken Recipe

Ingredients:

  • 1 whole heritage chicken
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 lemon, sliced
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions: How to Cook Heritage Chicken

  1. Preheat the oven to 375°F (190°C).
  2. Pat the heritage chicken dry with paper towels and season generously with salt and pepper, both inside and out.
  3. In a small bowl, mix together the olive oil, minced garlic, and dried thyme.
  4. Rub the olive oil mixture all over the chicken, making sure to coat it evenly.
  5. Place the lemon slices inside the cavity of the chicken.
  6. Place the chicken in a roasting pan and roast in the preheated oven for about 1 hour, or until the internal temperature reaches 165°F (74°C).
  7. Remove the chicken from the oven and let it rest for 10 minutes before carving.
  8. Serve the heritage chicken with your favorite side dishes and enjoy!
