  • 4 chicken legs
  • 1 cup all-purpose flour
  • 1 tablespoon Jamaican jerk seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon cayenne pepper (optional for extra heat)
  • Vegetable oil for frying


  1. In a large bowl, mix together the flour, Jamaican jerk seasoning, garlic powder, onion powder, paprika, salt, black pepper, and cayenne pepper (if using).
  2. Coat each chicken leg in the flour mixture, making sure to shake off any excess.
  3. In a large skillet, heat enough vegetable oil to cover the bottom of the pan over medium-high heat.
  4. Add the chicken legs to the skillet, skin side down, and cook for about 5 minutes or until golden brown.
  5. Flip the chicken legs and cook for an additional 5 minutes.
  6. Reduce the heat to medium-low and continue cooking the chicken legs for about 20 minutes or until they reach an internal temperature of 165°F (74°C).
  7. Remove the chicken legs from the skillet and place them on a paper towel-lined plate to drain any excess oil.
