Herb Brined Chicken


This herb-brined chicken recipe results in tender and flavorful meat with a delightful blend of herbs and spices. The brining process helps to infuse the chicken with moisture and flavor, making it perfect for grilling, roasting, or any cooking method you prefer.

For the Brine:
  • 4 bone-in, skin-on chicken breasts (or your preferred cuts)
  • 4 cups water
  • 1/4 cup kosher salt
  • 1/4 cup granulated sugar
  • 4-5 cloves garlic, smashed
  • 2 sprigs rosemary
  • 4-5 sprigs thyme
  • 1 tablespoon whole black peppercorns
  • Zest of 1 lemon
For Cooking and Serving:
  • 2 tablespoons olive oil
  • Freshly ground black pepper
  • Chopped fresh herbs (rosemary, thyme, parsley) for garnish
  • Lemon wedges for serving


  1. Prepare the Brine:
    • In a large pot, combine water, kosher salt, sugar, smashed garlic cloves, rosemary, thyme, whole black peppercorns, and lemon zest.
    • Heat the mixture over medium heat, stirring occasionally, until the salt and sugar are dissolved. This will create the brine solution.
    • Remove the pot from heat and allow the brine to cool completely.
  2. Brine the Chicken:
    • Place the chicken pieces in a large zip-top bag or a container suitable for brining.
    • Pour the cooled brine over the chicken, ensuring it's fully submerged. If needed, add more water to cover the chicken completely.
    • Seal the bag or cover the container and refrigerate for at least 4 hours or up to 12 hours. This brining time will enhance the flavor and tenderness of the chicken.
  3. Prepare and Cook the Chicken:
    • After brining, remove the chicken from the brine and rinse thoroughly under cold water to remove excess salt. Pat dry with paper towels.
    • Preheat your grill, oven, or stovetop pan to medium-high heat.
  4. Grill/Roast the Chicken:
    • If grilling, brush the chicken with olive oil and season with freshly ground black pepper.
    • Grill the chicken for about 6-8 minutes per side (timing may vary based on the thickness of the chicken), or until the internal temperature reaches 165°F (75°C) and the juices run clear.
    • If roasting, preheat the oven to 375°F (190°C). Place the chicken on a baking sheet and roast for about 25-30 minutes, until cooked through.
  5. Rest and Serve:
    • Once the chicken is cooked, remove it from the heat source and let it rest for a few minutes. This allows the juices to redistribute, resulting in juicier meat.
    • Garnish with chopped fresh herbs (rosemary, thyme, parsley) and serve with lemon wedges on the side.
