Ingredients:

  • 2 cups cooked chicken, shredded
  • 1 cup breadcrumbs

  • 1/4 cup celery, finely chopped
  • 1/4 cup mayonnaise
  • 1/4 cup parsley, chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 eggs, beaten
  • Oil for frying

Instructions:

  1. In a large bowl, combine the shredded chicken, breadcrumbs, onion, celery, mayonnaise, parsley, garlic powder, paprika, salt, and black pepper. Mix well until all the ingredients are evenly incorporated.
  2. Shape the mixture into small croquettes, about 2 inches in diameter. You can use your hands or a spoon to form the croquettes.
  3. In a shallow dish, place the beaten eggs. Dip each croquette into the beaten eggs, making sure to coat it completely.
  4. In a large skillet, heat enough oil to cover the bottom of the pan over medium heat. Once the oil is hot, carefully place the croquettes in the skillet, making sure not to overcrowd the pan.
  5. Cook the croquettes for about 3-4 minutes on each side, or until they are golden brown and crispy. You may need to cook them in batches depending on the size of your skillet.
