Prep time: 15 minutes Cook time: 30 minutesIngredients:
- 4 boneless, skinless chicken breasts
- 2 tablespoons harissa paste
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, sliced
- 1 cup chicken broth
- 1/2 cup Cava (Spanish sparkling wine)
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions: How to Cook Harissa Chicken Cava
- Preheat the oven to 375°F (190°C).
- Season the chicken breasts with salt and pepper, then rub the harissa paste all over the chicken. Let it marinate for at least 10 minutes.
- In a large oven-safe skillet, heat the olive oil over medium-high heat. Add the chicken breasts and sear for 2-3 minutes on each side until browned.
- Remove the chicken from the skillet and set aside. In the same skillet, add the diced onion, garlic, and sliced bell pepper. Cook until the vegetables are softened, about 5 minutes.
- Pour in the chicken broth and Cava, scraping up any browned bits from the bottom of the skillet. Bring to a simmer.
- Return the chicken breasts to the skillet, cover with a lid or foil, and transfer to the preheated oven. Bake for 20-25 minutes, or until the chicken is cooked through.
- Remove the skillet from the oven and let it rest for a few minutes. Garnish with chopped parsley before serving.
- Serve the Harissa Chicken Cava hot with your favorite side dishes. Enjoy!
