Gongura Chicken Recipe

Ingredients:
- 500 grams chicken, cut into pieces
- 2 cups gongura leaves, washed and chopped
- 1 onion, finely chopped
- 2 tomatoes, pureed
- 2 green chilies, slit
- 1 tablespoon ginger-garlic paste
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon coriander powder
- 1/2 teaspoon cumin powder
- 1/2 teaspoon garam masala
- Salt to taste
- 2 tablespoons oil
- Fresh coriander leaves for garnish
Instructions:
- Heat oil in a pan over medium heat. Add the chopped onions and sauté until they turn golden brown.
- Add the ginger-garlic paste and slit green chilies. Sauté for a minute until the raw smell disappears.
- Now, add the chicken pieces and cook until they turn slightly brown.
- Add turmeric powder, red chili powder, coriander powder, cumin powder, and salt. Mix well to coat the chicken evenly with the spices.
- Cover the pan and let the chicken cook for about 10 minutes or until it is almost done.
- Add the gongura leaves and tomato puree. Mix well and cook for another 5 minutes.
- Sprinkle garam masala and give it a final stir. Cook for a couple of minutes to allow the flavors to blend together. <
