Golo White Chicken Chili Recipe

Ingredients:

  • 2 pounds boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 cans (15 ounces each) white beans, drained and rinsed
  • 1 can (4 ounces) diced green chilies
  • 4 cups chicken broth
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup sour cream
  • 1/4 cup chopped fresh cilantro
  • 1 lime, juiced

Instructions:

  1. Heat the olive oil in a large pot or Dutch oven over medium heat.
  2. Add the diced onion and minced garlic to the pot and sauté until the onion is translucent and fragrant.
  3. Add the chicken breasts to the pot and cook until they are no longer pink in the center.
  4. Remove the chicken from the pot and shred it using two forks.
  5. Return the shredded chicken to the pot.
  6. Add the drained white beans, diced green chilies, chicken broth, ground cumin, dried oregano, chili powder, salt, and black pepper to the pot.

  8. Bring the chili to a boil, then reduce the heat to low and let it simmer for 45 minutes to 1 hour, stirring occasionally.
