Giada White Chicken Chili Recipe

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 jalapeno, seeded and minced
  • 1 pound boneless, skinless chicken breasts, cut into small cubes
  • 2 teaspoons ground cumin
  • 1 teaspoon dried oregano
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 (15-ounce) cans white beans, drained and rinsed
  • 4 cups chicken broth
  • 1 cup frozen corn kernels
  • 1/2 cup heavy cream
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup freshly squeezed lime juice


  1. In a large pot, heat the olive oil over medium heat. Add the diced onion, minced garlic, and jalapeno. Cook until the onion is translucent and the garlic is fragrant, about 5 minutes.
  2. Add the cubed chicken to the pot and cook until browned on all sides, about 5 minutes.
  3. Sprinkle the cumin, oregano, chili powder, salt, and black pepper over the chicken. Stir to coat the chicken evenly with the spices.
  4. Add the white beans and chicken broth to the pot. Bring to a boil, then reduce the heat to low and simmer for 30 minutes.
