  • 2 tablespoons olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 jalapeno, seeded and diced
  • 1 pound boneless, skinless chicken breasts, cut into small cubes
  • 2 teaspoons ground cumin
  • 1 teaspoon dried oregano
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cans (15 ounces each) white beans, drained and rinsed
  • 4 cups chicken broth
  • 1 cup frozen corn kernels
  • 1/4 cup chopped fresh cilantro
  • 1 lime, juiced


  1. In a large pot, heat the olive oil over medium heat. Add the diced onion, minced garlic, and diced jalapeno. Cook until the onion is translucent and the vegetables are softened, about 5 minutes.
