Ingredients:

  • 4 bone-in, skin-on chicken thighs
  • 3 tablespoons white miso paste
  • 4 cloves of garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 1 tablespoon sesame oil
  • 1 teaspoon grated ginger
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • Chopped green onions, for garnish

Instructions:

  1. Preheat your oven to 425°F (220°C).
  2. In a small bowl, whisk together the miso paste, minced garlic, soy sauce, honey, sesame oil, grated ginger, black pepper, and red pepper flakes (if using).
  3. Place the chicken thighs in a large zip-top bag or a shallow dish. Pour the miso marinade over the chicken, making sure to coat each piece evenly. Seal the bag or cover the dish and let the chicken marinate in the refrigerator for at least 30 minutes, or up to overnight for maximum flavor.
