Ingredients:

  • 2 boneless, skinless chicken breasts
  • 1/4 cup soy sauce
  • 2 tablespoons sriracha sauce
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar
  • 1 teaspoon minced garlic
  • 1 teaspoon grated ginger
  • 1/2 teaspoon red pepper flakes
  • 1/4 cup mayonnaise
  • 1 tablespoon lime juice
  • 4 large tortillas
  • 1 cup shredded lettuce
  • 1/2 cup sliced bell peppers
  • 1/2 cup sliced cucumbers
  • 1/4 cup chopped cilantro

Instructions:

  1. In a small bowl, whisk together the soy sauce, sriracha sauce, honey, rice vinegar, minced garlic, grated ginger, and red pepper flakes. Set aside.
  2. Heat a grill pan or skillet over medium-high heat. Season the chicken breasts with salt and pepper, then grill them for about 6-8 minutes per side, or until cooked through. Remove from heat and let them rest for a few minutes.
  3. In a separate bowl, mix together the mayonnaise and lime juice to make the lime mayo sauce.
  4. Once the chicken has rested, slice it into thin strips.
  5. Warm the tortillas in a dry skillet or microwave for a few seconds.
  6. Spread a spoonful of the firecracker sauce onto each tortilla.
