Farmers Chicken Recipe


Farmers Chicken is a delicious and hearty dish that is perfect for a comforting meal. This recipe combines tender chicken with a flavorful blend of herbs and vegetables, creating a dish that is both satisfying and nutritious.

  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 zucchini, diced
  • 1 cup mushrooms, sliced
  • 1 can diced tomatoes
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried oregano
  • Salt and pepper to taste


  1. Preheat the oven to 375°F (190°C).
  2. Heat the olive oil in a large skillet over medium heat.
  3. Add the diced onion and minced garlic to the skillet and sauté until the onion is translucent.
  4. Add the diced bell pepper, zucchini, and mushrooms to the skillet and cook until the vegetables are tender.
  5. Push the vegetables to one side of the skillet and add the chicken breasts to the other side.
  6. Cook the chicken breasts for about 5 minutes on each side, or until they are browned.
  7. In a separate bowl, mix together the diced tomatoes, dried thyme, dried rosemary, dried oregano, salt, and pepper.
  8. Pour the tomato mixture over the chicken and vegetables in the skillet.
  9. Cover the skillet with a lid or aluminum foil and transfer it to the preheated oven.
  10. Bake for 30 minutes, or until the chicken is cooked through and the flavors have melded together.
  11. Remove from the oven and let it rest for a few minutes before serving.
