This fancy fast chicken recipe is perfect for those nights when you want to impress your guests with a delicious and elegant dish, but don't have a lot of time to spend in the kitchen. Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1/4 cup all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1/4 cup white wine
  • 1 cup chicken broth
  • 1 tablespoon Dijon mustard
  • 1/2 cup heavy cream
  • 2 tablespoons chopped fresh parsley

Instructions:

  1. In a shallow dish, mix together the flour, salt, and black pepper. Dredge the chicken breasts in the flour mixture, shaking off any excess.
  2. In a large skillet, heat the olive oil over medium-high heat. Add the chicken breasts and cook for 4-5 minutes per side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
  3. Reduce the heat to medium and add the white wine to the skillet. Cook for 1 minute, scraping the bottom of the skillet to loosen any browned bits.
  4. Add the chicken broth and Dijon mustard to the skillet. Bring to a simmer and cook for 5 minutes, or until the sauce has reduced slightly.
  5. Stir in the heavy cream and cook for an additional 2 minutes, or until the sauce has thickened. Return the chicken breasts to the skillet and cook for 2-3 minutes, or until heated through.
  6. Remove the skillet from the heat and sprinkle the chopped parsley over the chicken breasts. Serve immediately.
