Ingredients:
- 4 boneless, skinless chicken breasts
- 1/4 cup all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
- 1/4 cup white wine
- 1 cup chicken broth
- 1 tablespoon Dijon mustard
- 1/2 cup heavy cream
- 2 tablespoons chopped fresh parsley
Instructions:
- In a shallow dish, mix together the flour, salt, and black pepper. Dredge the chicken breasts in the flour mixture, shaking off any excess.
- In a large skillet, heat the olive oil over medium-high heat. Add the chicken breasts and cook for 4-5 minutes per side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
- Reduce the heat to medium and add the white wine to the skillet. Cook for 1 minute, scraping the bottom of the skillet to loosen any browned bits.
- Add the chicken broth and Dijon mustard to the skillet. Bring to a simmer and cook for 5 minutes, or until the sauce has reduced slightly.
- Stir in the heavy cream and cook for an additional 2 minutes, or until the sauce has thickened. Return the chicken breasts to the skillet and cook for 2-3 minutes, or until heated through.
- Remove the skillet from the heat and sprinkle the chopped parsley over the chicken breasts. Serve immediately.
