  • 2 boneless, skinless chicken breasts
  • 2 lemons
  • 2 cloves of garlic, minced
  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon fresh rosemary, chopped
  • 2 tablespoons olive oil
  • Salt and pepper to taste


  1. Preheat your oven to 400°F (200°C).
  2. Place the chicken breasts on a cutting board and season both sides with salt and pepper.
  3. In a small bowl, combine the minced garlic, chopped thyme, chopped rosemary, and the juice of one lemon.
  4. Drizzle the olive oil over the chicken breasts, then spoon the herb and lemon mixture evenly over each breast.
  5. Using your hands, gently massage the herb mixture into the chicken, ensuring it is well coated.
  6. Heat a large oven-safe skillet over medium-high heat. Once hot, add the chicken breasts and sear for 2-3 minutes on each side, until golden brown.
  7. While the chicken is searing, slice the second lemon into thin rounds.
  8. After searing, remove the skillet from the heat and place the lemon slices on top of the chicken breasts.
  9. Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
  10. Once cooked, remove the skillet from the oven and let the chicken rest for a few minutes before serving.
