Dominican Rotisserie Chicken Recipe


Dominican rotisserie chicken is a flavorful and juicy dish that is popular in the Dominican Republic. It is marinated in a delicious blend of spices and then cooked on a rotisserie until it is tender and golden brown. This recipe is perfect for a family dinner or a gathering with friends.

  • 1 whole chicken
  • 4 cloves of garlic, minced
  • 1 tablespoon dried oregano
  • 1 tablespoon paprika
  • 1 tablespoon ground cumin
  • 1 tablespoon salt
  • 1 teaspoon black pepper
  • 1/4 cup olive oil
  • 1/4 cup orange juice
  • 1/4 cup lime juice


  1. In a small bowl, mix together the minced garlic, dried oregano, paprika, ground cumin, salt, black pepper, olive oil, orange juice, and lime juice.
  2. Place the whole chicken in a large ziplock bag and pour the marinade over it. Seal the bag and massage the marinade into the chicken, making sure it is evenly coated. Marinate in the refrigerator for at least 4 hours or overnight for best results.
  3. Preheat your rotisserie grill to medium-high heat.
  4. Remove the chicken from the marinade and discard any excess marinade. Secure the chicken onto the rotisserie spit and make sure it is balanced.
  5. Place the spit on the rotisserie grill and close the lid. Cook the chicken for about 1 hour and 30 minutes, or until the internal temperature reaches 165°F (74°C) and the skin is golden brown and crispy.
  6. Once cooked, carefully remove the chicken from the rotisserie and let it rest for 10 minutes before carving.
