- 1 pound boneless, skinless chicken breasts
- 1 cup white rice
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 4 cloves garlic, minced
- 6 cups chicken broth
- 1 teaspoon dried thyme
- 1 bay leaf
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions:
- In a large pot, heat some oil over medium heat. Add the diced onion, carrots, celery, and minced garlic. Cook until the vegetables are softened, about 5 minutes.
- Add the chicken breasts to the pot and cook until browned on both sides, about 3-4 minutes per side.
- Pour in the chicken broth and add the dried thyme and bay leaf. Season with salt and pepper to taste.
- Bring the soup to a boil, then reduce the heat to low and cover the pot. Let it simmer for about 20 minutes, or until the chicken is cooked through.
- Remove the chicken breasts from the pot and shred them using two forks. Return the shredded chicken to the pot.
- Add the white rice to the pot and stir well. Cover the pot and let it simmer for another 20 minutes, or until the rice is cooked and tender.
- Remove the bay leaf from the soup and discard it. Taste and adjust the seasoning if needed.
- Serve the chicken rice soup hot, garnished with fresh parsley.
