Demo's Chicken Rice Soup is a comforting and delicious dish that is perfect for any time of the year. This hearty soup is packed with tender chicken, flavorful rice, and a medley of vegetables. It is easy to make and will warm you up from the inside out.

Ingredients:

  • 1 pound boneless, skinless chicken breasts
  • 1 cup white rice
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cloves garlic, minced
  • 6 cups chicken broth
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. In a large pot, heat some oil over medium heat. Add the diced onion, carrots, celery, and minced garlic. Cook until the vegetables are softened, about 5 minutes.
  2. Add the chicken breasts to the pot and cook until browned on both sides, about 3-4 minutes per side.
  3. Pour in the chicken broth and add the dried thyme and bay leaf. Season with salt and pepper to taste.
  4. Bring the soup to a boil, then reduce the heat to low and cover the pot. Let it simmer for about 20 minutes, or until the chicken is cooked through.
  5. Remove the chicken breasts from the pot and shred them using two forks. Return the shredded chicken to the pot.
  6. Add the white rice to the pot and stir well. Cover the pot and let it simmer for another 20 minutes, or until the rice is cooked and tender.
  7. Remove the bay leaf from the soup and discard it. Taste and adjust the seasoning if needed.
  8. Serve the chicken rice soup hot, garnished with fresh parsley.
