Ingredients:

  • 1.5 kg chicken, cut into pieces
  • 3 tablespoons curry powder
  • 2 tablespoons vegetable oil
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 thumb-sized ginger, grated
  • 2 potatoes, peeled and cut into cubes
  • 1 carrot, peeled and sliced
  • 1 cup coconut milk
  • 1 cup chicken broth
  • 2 tablespoons fish sauce
  • 1 tablespoon sugar
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions:

  1. In a bowl, mix the curry powder with a little water to form a paste. Set aside.
  2. Heat the vegetable oil in a large pot over medium heat. Add the chopped onion, minced garlic, and grated ginger. Sauté until fragrant.
  3. Add the curry paste to the pot and cook for a minute, stirring constantly.

  6. Season the mixture with fish sauce, sugar, salt, and pepper. Stir again.
  7. Bring the curry to a boil, then reduce the heat to low. Cover the pot and let it simmer for about 30 minutes, or until the chicken is cooked through and the potatoes are tender.
