Ingredients:
- 1.5 kg chicken, cut into pieces
- 3 tablespoons curry powder
- 2 tablespoons vegetable oil
- 1 onion, finely chopped

- 1 thumb-sized ginger, grated
- 2 potatoes, peeled and cut into cubes
- 1 carrot, peeled and sliced
- 1 cup coconut milk
- 1 cup chicken broth
- 2 tablespoons fish sauce
- 1 tablespoon sugar
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions:
- In a bowl, mix the curry powder with a little water to form a paste. Set aside.
- Heat the vegetable oil in a large pot over medium heat. Add the chopped onion, minced garlic, and grated ginger. Sauté until fragrant.
