Prep Time: 10 minutes Cook Time: 20 minutesIngredients:
- 8 ounces of pasta (your choice)
- 2 tablespoons olive oil
- 1 small onion, diced
- 2 cloves of garlic, minced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 cup sliced mushrooms
- 1 cup cherry tomatoes, halved
- 1 cup cooked chicken breast, shredded
- 1 teaspoon smoked paprika
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried thyme
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup grated Parmesan cheese
- Fresh parsley, chopped (for garnish)
Instructions:
- Cook the pasta according to package instructions. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat.
- Add the diced onion and minced garlic to the skillet. Sauté until the onion becomes translucent.
- Add the sliced red and yellow bell peppers, mushrooms, and cherry tomatoes to the skillet. Cook for about 5 minutes, until the vegetables are tender.
- Add the shredded chicken breast to the skillet and stir well.
- Sprinkle the smoked paprika, dried oregano, dried thyme, salt, and black pepper over the chicken and vegetables. Stir to combine.
- Add the cooked pasta to the skillet and toss everything together until well coated.
- Sprinkle the grated Parmesan cheese over the pasta and stir until melted and evenly distributed.
- Remove from heat and garnish with fresh parsley.
- Serve hot and enjoy!
