  • 1 red bell pepper
  • 1 green bell pepper
  • 1 yellow bell pepper
  • 1 red onion
  • 1 zucchini
  • 1/4 cup olive oil
  • 2 tablespoons soy sauce
  • 2 tablespoons honey
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

  1. In a small bowl, whisk together the olive oil, soy sauce, honey, minced garlic, paprika, salt, and black pepper to make the marinade.
  2. Cut the chicken breasts into bite-sized pieces and place them in a large zip-top bag. Pour the marinade over the chicken, seal the bag, and massage it gently to ensure the chicken is evenly coated. Marinate in the refrigerator for at least 1 hour, or overnight for maximum flavor.
  3. While the chicken is marinating, prepare the vegetables. Cut the bell peppers, red onion, and zucchini into chunks that are roughly the same size as the chicken pieces.
  4. Preheat your grill to medium-high heat.
  5. Thread the marinated chicken and vegetables onto skewers, alternating between the chicken and vegetables.
  6. Place the skewers on the preheated grill and cook
