  • 1 pound boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 6 cups chicken broth
  • 1 cup orzo pasta
  • 2 lemons, juiced and zested
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)


  1. Heat the olive oil in a large pot over medium heat. Add the diced onion, carrots, and celery. Cook until the vegetables are tender, about 5 minutes.
