Corned Chicken Recipe

  • 4 chicken breasts
  • 1 cup water

  • 1 tablespoon dried thyme
  • 4 cloves garlic, minced


  1. In a large bowl, combine water, salt, sugar, black peppercorns, mustard seeds, coriander seeds, dried thyme, and minced garlic. Stir until the salt and sugar are dissolved.
  2. Place the chicken breasts in a resealable plastic bag and pour the brine mixture over them. Seal the bag and refrigerate for at least 4 hours or overnight.
  3. Preheat the oven to 375°F (190°C).
  4. Remove the chicken breasts from the brine and pat them dry with paper towels.
  5. Place the chicken breasts on a baking sheet lined with parchment paper.
  6. Bake the chicken in the preheated oven for 30-35 minutes, or until the internal temperature reaches 165°F (74°C).
