Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 tablespoons unsalted butter, divided
  • 1 tablespoon olive oil
  • 8 ounces mushrooms, sliced
  • 2 cloves garlic, minced
  • 1 cup Marsala wine
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup chopped fresh parsley

Instructions:

  1. In a shallow dish, combine the flour, salt, and black pepper. Dredge the chicken breasts in the flour mixture, shaking off any excess.
  2. In a large skillet, melt 2 tablespoons of butter and olive oil over medium heat. Add the chicken breasts and cook until golden brown on both sides, about 4-5 minutes per side. Remove the chicken from the skillet and set aside.
  3. In the same skillet, melt the remaining 2 tablespoons of butter. Add the mushrooms and garlic, and cook until the mushrooms are tender and golden brown, about 5 minutes.
  4. Pour in the Marsala wine and chicken broth, scraping the bottom of the skillet to release any browned bits. Bring the mixture to a simmer and cook for 5 minutes to allow the alcohol to cook off.
  5. Reduce the heat to low and stir in the heavy cream. Simmer for an additional 5 minutes, or until the sauce has thickened slightly.
