Southern-style chicken stew is a comforting and hearty dish that is perfect for chilly evenings. This recipe is incredibly easy to make and requires minimal effort. The combination of tender chicken, flavorful vegetables, and aromatic spices creates a delicious and satisfying stew that will warm your soul.

Ingredients:

  • 1 whole chicken, cut into pieces
  • 2 tablespoons vegetable oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 1 green bell pepper, diced
  • 4 cups chicken broth
  • 1 can diced tomatoes
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 bay leaf
  • Salt and pepper to taste

Instructions:

  1. Heat the vegetable oil in a large pot or Dutch oven over medium heat.
  2. Add the chicken pieces to the pot and cook until browned on all sides. Remove the chicken from the pot and set aside.
  3. In the same pot, add the diced onion and minced garlic. Sauté until the onion becomes translucent and fragrant.
  4. Add the sliced carrots, celery, and diced green bell pepper to the pot. Cook for a few minutes until the vegetables start to soften.
  5. Return the chicken pieces to the pot and pour in the chicken broth and diced tomatoes.
  6. Add the dried thyme, dried oregano, bay leaf, salt, and pepper. Stir well to combine.
  7. Bring the stew to a boil, then reduce the heat to low. Cover the pot and let it simmer for about 45 minutes to 1 hour, or until the chicken is cooked through and tender.
  8. Taste and adjust the seasoning if needed.
  9. Remove the bay leaf before serving.
