  • 2 cups cooked and shredded chicken
  • 1/2 cup diced onion
  • 1/2 cup diced bell pepper
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded Monterey Jack cheese
  • 12 small flour tortillas
  • Vegetable oil, for frying
  • Sour cream, guacamole, and salsa, for serving

  1. In a large skillet, heat some oil over medium heat. Add the diced onion, bell pepper, and minced garlic. Cook until the vegetables are softened, about 5 minutes.
  2. Add the shredded chicken, ground cumin, chili powder, salt, and black pepper to the skillet. Stir well to combine and cook for an additional 2 minutes to allow the flavors to meld together.
  3. Remove the skillet from the heat and let the chicken mixture cool slightly. Once cooled, stir in the shredded Monterey Jack cheese.
  4. Place a small amount of the chicken mixture onto each flour tortilla and roll tightly to form a flauta. Secure the flauta with toothpicks to prevent it from unraveling.
  5. In a large skillet, heat vegetable oil over medium-high heat. Carefully add the flautas to the hot oil and fry until golden brown and crispy, about 3-4 minutes per side.
  6. Once the flautas are cooked, remove them
