Ingredients:

  • 1 whole chicken, cut into pieces
  • 1 cup long-grain rice
  • 2 carrots, peeled and diced
  • 2 celery stalks, diced
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 6 cups chicken broth
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. In a large pot, heat some oil over medium heat. Add the chicken pieces and cook until browned on all sides. Remove the chicken from the pot and set aside.
  2. In the same pot, add the diced onion, carrots, and celery. Sauté until the vegetables are softened, about 5 minutes. Add the minced garlic and cook for an additional minute.
  3. Return the chicken pieces to the pot and add the bay leaf, dried thyme, dried rosemary, and chicken broth. Season with salt and pepper to taste.
  4. Bring the soup to a boil, then reduce the heat to low. Cover the pot and let it simmer for about 30 minutes, or until the chicken is cooked through and tender.
  5. Remove the chicken pieces from the pot and shred the meat using two forks. Discard the bones and return the shredded chicken to the pot.
