Chicken Verde Burrito Recipe

  • 1 lb boneless, skinless chicken breasts
  • 1 cup salsa verde
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup sour cream
  • 1/4 cup chopped fresh cilantro
  • 1 tsp ground cumin
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • 4 large flour tortillas
  • 1 tbsp olive oil

Instructions: How to Cook Chicken Verde Burrito

  1. Season the chicken breasts with cumin, garlic powder, salt, and pepper.
  2. Heat olive oil in a skillet over medium-high heat. Add the chicken breasts and cook for 5-6 minutes per side, or until cooked through. Remove from the skillet and let rest for a few minutes before slicing into strips.
  3. In the same skillet, add salsa verde and bring to a simmer. Add the sliced chicken back to the skillet and stir to coat the chicken in the salsa verde.
  4. Warm the flour tortillas in a separate skillet or in the microwave until soft and pliable.
  5. Assemble the burritos by placing a spoonful of the chicken and salsa verde mixture in the center of each tortilla. Top with shredded cheese, sour cream, and chopped cilantro.
  6. Roll up the burritos by folding in the sides and then rolling from the bottom up. Place seam-side down on a plate.
  7. Optional: Heat a clean skillet over medium heat and place the burritos seam-side down to crisp up the tortilla slightly.
