Chicken Velvet Soup Recipe

- 1 teaspoon dried thyme

Instructions:
- In a large pot, melt the butter over medium heat. Add the diced onion, carrots, celery, and garlic. Cook until the vegetables are tender, about 5 minutes.
- Add the flour to the pot and stir until well combined with the vegetables. Cook for an additional 2 minutes to cook off the raw flour taste.
- Slowly pour in the chicken broth while stirring constantly. Bring the mixture to a boil, then reduce the heat to low and simmer for 10 minutes.
- While the broth is simmering, bring a separate pot of water to a boil. Add the chicken breasts and cook until they are no longer pink in the center, about 15 minutes. Remove the chicken from the pot and shred it into bite-sized pieces.
- Add the shredded chicken, heavy cream, dried thyme, salt, and pepper to the pot with the broth. Stir well to combine.
- Simmer the soup for an additional 10 minutes to allow the flavors to meld together.
