Ingredients:

  • 2 boneless, skinless chicken breasts
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1/2 cup diced onion
  • 1/2 cup diced carrots
  • 1/2 cup diced celery
  • 2 cloves garlic, minced
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions:

  1. In a large pot, melt the butter over medium heat. Add the diced onion, carrots, celery, and garlic. Cook until the vegetables are tender, about 5 minutes.
  2. Add the flour to the pot and stir until well combined with the vegetables. Cook for an additional 2 minutes to cook off the raw flour taste.
  3. Slowly pour in the chicken broth while stirring constantly. Bring the mixture to a boil, then reduce the heat to low and simmer for 10 minutes.
  4. While the broth is simmering, bring a separate pot of water to a boil. Add the chicken breasts and cook until they are no longer pink in the center, about 15 minutes. Remove the chicken from the pot and shred it into bite-sized pieces.
  5. Add the shredded chicken, heavy cream, dried thyme, salt, and pepper to the pot with the broth. Stir well to combine.
  6. Simmer the soup for an additional 10 minutes to allow the flavors to meld together.
  7. Taste and adjust the seasoning if needed. Serve hot and enjoy
