Chicken tikka masala soup is a delicious and flavorful dish that combines the traditional flavors of chicken tikka masala with the comforting warmth of a soup. This recipe is inspired by the popular soup from Panera Bread and is perfect for a cozy meal on a chilly day.

Ingredients:

  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 2 tablespoons tikka masala paste
  • 1 can (14 ounces) diced tomatoes
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Fresh cilantro, chopped (for garnish)

Instructions:

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and cook until softened, about 5 minutes.
  2. Add the minced garlic and grated ginger to the pot and cook for an additional 1 minute, until fragrant.
  3. Add the chicken pieces to the pot and cook until browned on all sides, about 5 minutes.
  4. Stir in the tikka masala paste and cook for 1 minute to coat the chicken and vegetables.
  5. Add the diced tomatoes, chicken broth, salt, and black pepper to the pot. Bring the mixture to a boil, then reduce the heat and simmer for 15 minutes.
  6. Using an immersion blender or a regular blender, puree the soup until smooth. If using a regular blender, be sure to blend in batches and vent the lid to prevent hot soup from splattering.
  7. Return the soup to the pot and stir in the heavy cream. Cook for an additional 5 minutes to heat through.
