Chicken Tampico Recipe

  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 jalapeno pepper, seeded and minced
  • 1 can (14 ounces) diced tomatoes
  • 1 cup chicken broth
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh cilantro, chopped (for garnish)


  1. Season the chicken breasts with salt, pepper, chili powder, cumin, and paprika.
  2. In a large skillet, heat the olive oil over medium heat.
  3. Add the seasoned chicken breasts to the skillet and cook for about 5 minutes on each side, or until browned and cooked through. Remove the chicken from the skillet and set aside.
  4. In the same skillet, add the diced onion, garlic, red bell pepper, green bell pepper, and jalapeno pepper. Cook until the vegetables are tender, about 5 minutes.
  5. Add the diced tomatoes and chicken broth to the skillet. Stir well to combine.
  6. Return the chicken breasts to the skillet and simmer for about 10 minutes, or until the sauce has thickened slightly.
  7. Remove the chicken from the skillet and let it rest for a few minutes before slicing.
