  • 1 whole chicken, cut into pieces

  • 1 bay leaf
  • 2 cups water


  1. In a large pot, heat some oil over medium heat. Add the chicken pieces and cook until browned on all sides.

  3. In the same pot, add the chopped onion and minced garlic. Sauté until the onion becomes translucent.
  4. Add the vinegar, soy sauce, brown sugar, salt, black pepper, and bay leaf to the pot. Stir well to combine.
  5. Return the chicken to the pot and pour in the water. Bring the mixture to a boil.
  6. Reduce the heat to low, cover the pot, and let it simmer for about 1 hour or until the chicken is tender.
  7. Once the chicken is cooked, remove it from the pot and set it aside.
  8. Increase the heat to medium-high and let the sauce reduce for about 5 minutes.
  9. Remove the bay leaf from the sauce.
  10. Serve the chicken souse with the reduced sauce poured over the top.
