Chicken Scarpariello Carmines Recipe

  • 4 bone-in, skin-on chicken thighs
  • 4 bone-in, skin-on chicken drumsticks
  • Salt and pepper to taste
  • 1/4 cup all-purpose flour
  • 2 tablespoons olive oil
  • 4 Italian sausages, sliced
  • 1 onion, thinly sliced
  • 3 cloves garlic, minced
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 1 cup chicken broth
  • 1/2 cup white wine
  • 1/4 cup white wine vinegar
  • 1 tablespoon dried oregano
  • 1/2 teaspoon red pepper flakes
  • 1/4 cup chopped fresh parsley


  1. Season the chicken thighs and drumsticks with salt and pepper. Dredge them in flour, shaking off any excess.
  2. In a large skillet, heat the olive oil over medium-high heat. Add the chicken pieces and cook until browned on all sides, about 8 minutes. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add the sliced sausages and cook until browned, about 5 minutes. Remove the sausages from the skillet and set aside.
  4. Add the onion, garlic, and bell peppers to the skillet. Cook until the vegetables are softened, about 5 minutes.
  5. Pour in the chicken broth, white wine, and white wine vinegar. Stir in the dried oregano and red pepper flakes. Bring the mixture to a
