Chicken Salad Chick Pasta Salad Recipe

Chicken spinach wraps are a delicious and healthy option for a quick and easy meal. Packed with protein and nutrients, these wraps are perfect for lunch or dinner. With a prep time of 10 minutes and a cook time of 15 minutes, you can have a satisfying meal on the table in no time.

Ingredients:

  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 large whole wheat tortillas
  • 2 cups fresh spinach leaves
  • 1/2 cup diced tomatoes
  • 1/4 cup sliced red onions
  • 1/4 cup crumbled feta cheese
  • 1/4 cup Greek yogurt

Instructions:

  1. Preheat your grill or stovetop grill pan over medium heat.
  2. In a small bowl, mix together the garlic powder, paprika, salt, and black pepper.
  3. Rub the chicken breasts with olive oil, then sprinkle the spice mixture evenly over both sides of the chicken.
  4. Grill the chicken for about 6-8 minutes per side, or until cooked through and no longer pink in the center. Remove from heat and let it rest for a few minutes.
  5. Slice the cooked chicken into thin strips.
  6. Warm the tortillas in a dry skillet over medium heat for about 30 seconds on each side.
  7. Place a handful of spinach leaves on each tortilla, then top with sliced chicken, diced tomatoes, sliced red onions, crumbled feta cheese, and a dollop of Greek yogurt.
  8. Roll up the tortillas tightly, tucking in the sides as you go.
  9. Cut the wraps in half diagonally and serve.
